Stuffed Poblano Peppers with Peach Mint Salsa Shopping List

Produce

  • 2-3 firm yellow peaches
  • 3 heirloom tomatoes varied in color
  • 1/2 medium purple onion
  • 1/4 cup fresh cilantro
  • 6 cloves garlic
  • 1 lemon
  • 1-2 jalapenos
  • 1 1/2 Tbs mint (I used chocolate mint)
  • 4-6 medium poblano peppers
  • 1 bunch kale  stems removed and chopped
  • 1 white or yellow onion diced

Condiments, Oils and Seasonings

  • 1 Tbs chile powder
  • 1 Tbs cumin
  • 1 tsp  ground cloves
  • 1 Tbs honey, agave nectar or maple syrup
  • 2 Tbs soy sauce
  • Olive oil and/or Grapeseed oil
  • 2 cup chicken broth

Meat

  • 4 sausages

Dairy

  • 8 oz  queso fresco (or other desired cheese, I always recommend goat!)

Dry Goods

  • 1 cup quinoa or other desired grain (optional)
